NORTH Miznon and Carrotsticks & Cravings Open at The Vale Niseko This December

Chef Eyal Shani’s modern Mediterranean restaurant brings a winter dinner residency to Upper Hirafu, and shares the space with Australian café Carrotsticks & Cravings by day.

NORTH Miznon, the Singapore restaurant from Michelin-starred Chef Eyal Shani, is opening a winter residency at The Vale Niseko in Upper Hirafu this December. Dinner runs nightly from 5pm to 11pm with a changing menu built around Hokkaido seafood, dairy and meat.

During the day, the same room becomes Carrotsticks & Cravings, the Australian-style café known in Singapore for its house-baked sourdough and brunch plates. Breakfast starts on 1 December, and from 10 December the café stays open until 4pm.

Shani’s Mediterranean cooking has already reached more than 20 cities, including Taipei, Toronto, Paris and Melbourne. Niseko is the newest addition to his ever-growing empire. Here’s what to know before you book:

About NORTH Miznon: Eyal Shani’s Ingredient-Led Kitchen

Chef Eyal Shani

Miznon means ‘canteen’, and NORTH Miznon is its dressed-up sibling: the full-service version of Eyal Shani’s cooking. His approach is simple. He starts with the ingredient and lets it lead, so the natural flavours of vegetables, seafood, olive oil and tahini do most of the work. His New York restaurant SHMONÉ holds a Michelin star, and his devotion to the humble tomato is well documented (his Instagram handle is, fittingly, @eyaltomato).

The team believes a restaurant should represent its setting. In Singapore, that means cooking with whatever comes through the kitchen doors. In Niseko, it means working with Hokkaido’s freshest bounty.

Chef Or Hakmimi, who has led NORTH Miznon Singapore since the beginning, is at the helm in Niseko this winter. He’s cooking with the region’s finest seafood, dairy and meat, and the menu changes weekly (even daily). Expect his signature culinary flair, reimagined with the distinctive flavours of Japan’s north.

NORTH Miznon Menu: Hummus, Candied Pasta and Fire-Grilled Lamb

Spinach Pasta

With a menu that changes daily, there’s little chance of getting bored. Dishes will come and go throughout the season, but a few NORTH classics are making the trip to Hokkaido.

Hummus! arrives topped with prawns in beurre noisette, rich and silky and built for the middle of the table. The Spinach and Parmesan Candied Pasta is coming too: the signature dish pairs delicate handmade pasta with sage butter and pine nuts. Meat lovers should look out for the Lamb Kebab, grilled over fire with plenty of char, and the perfectly seared Striploin Steak.

The Vibe: Dinner and Drinks Until 11pm

NORTH Miznon is designed for a relaxed après-ski evening. Think plates passed around the table, bottles opening and dinners that run longer than planned. The cooking is precise, but the room is as relaxed as it gets. Doors open from 5pm until 11pm, which makes it prime territory for a dinner bite that turns into a little party.

About Carrotsticks & Cravings: Australian-style cafe

For breakfast and lunch, the same room transforms into Carrotsticks & Cravings. Rooted in Australian café culture, it has a loyal following in Singapore across two locations: a riverside café at Robertson Quay and a CBD outpost on Stanley Street. Everything is baked in-house, including a slow-fermented sourdough that forms the base of many of its most popular dishes.

Carrotsticks & Cravings Menu: Smashed Avo, Pancakes and Wagyu Burgers

Start with the Signature Smashed Avo: avocado, feta and homemade dukkah on sourdough, with eggs or smoked salmon if you need extra fuel for the slopes. Pancakes the Right Way are gluten-free and refined sugar-free. They’re made with blueberry, banana and oats and finished with Greek yoghurt, berries and maple syrup. The Pastrami Sandwich layers smoked brisket, caramelised onions, pickles and Gouda on toasted sourdough.

At lunchtime, Aussie classics arrive for skiers refuelling between runs: Steak and Frites, Fish and Chips, and a Wagyu Burger. Vegetarian, gluten-free and dairy-free options are available throughout.

Both restaurants are at The Vale Niseko, a ski-in ski-out condotel in Upper Hirafu. In 2026, it’s one of only three hotels in Hokkaido to be a Forbes Travel Guide Recommended property. The Vale Niseko also has its own onsen and a heated outdoor pool, so you can ski all day and soak until dinner.
